- Take 1 onion chopped
- Prepare 3 cloves garlic minced
- Use 3 sticks celery chopped
- Prepare 3 carrots oblique cut
- Use 3 tblsp thyme
- Get 2 bay leaves
- You need 2 tblsp tomato paste
- Get 3 tblsp Worcestershire sauce
- You need 2 cups beef stock
- Prepare 600 g beef (brisket and short rib) cut
- Prepare 2 cups mushrooms cut in half
- Take 1 cup water
- Provide 1/4 red pepper chunky chopped
- Get 1/4 yellow pepper chunky chopped
- Get 2 green peppers chunky chopped

- On medium heat, fry onions, celery and garlic for 2 minutes. Add carrots and fry for a further 2 minutes. Add thyme and bay leaves and stir.
