The ingredients needed to make Fish Sausage and Potatoes Stir-fried with Green Onion and Salted Kombu:
- Take 3 small Potatoes
- You need 1 Fish sausage
- Use 10 grams Shio-kombu
- You need 1 tsp Mirin
- Provide 1/4 tsp Grated ginger
- Use 3 to 4 Chopped green onions
- Get 1 tbsp Mayonnaise
- Use 1 Pepper
Steps to make Fish Sausage and Potatoes Stir-fried with Green Onion and Salted Kombu:
- Cut the potatoes into 2-3 mm thick matchsticks, and soak in a bowl of water for at least 5 minutes to wash off the surface starch. Drain into a colander or sieve just before you stir fry it.
- Slice the fish sausage diagonally into 2 to 3 mm slices, then julienne. Slice the green onion into thin rounds (you should end up with about 2 tablespoons).
- Heat up a a frying pan, add the mayonnaise, ginger and potato and stir fry for 1 minute. When the potato has wilted slightly add the mirin and mix well.
- Add the sausage and salted-kombu and mix everything together. Season with pepper, add the green onion and it's done.
- For reference… 10 g of salted-konbu is about this much. About 1 tablespoon.
- 200 g of potatoes is about this much.
- It was fine to soak the potatoes at Step 1 for a whole day. So you can soak them overnight to make the stir-fry for bentos in the morning.
Stir in the mustard then pour in the stock. Mash the potatoes with the whipping cream and fryed onion/butter mixture until fluffy (I use my Kitchen Aid stand mixer for this with the mixing attachment and make certain to mash the potatoes while they are still warm or hot). Season with salt and tons of black pepper. Glenary's is a bakery so I highly doubt it. And I see no bacon, sausages, eggs or beans so I think Keventer's is out too, but I may be wrong.
