The ingredients needed to make Apple Suji Halwa:
  1. Take 1/2 cups suji, semolina
  2. Provide 2 tbsp ghee
  3. Take 3-4 tbsp sugar or to taste
  4. Get 1/4 tsp cardamom powder
  5. Get pinch salt
  6. Use 2-3 tbsp chopped nuts
  7. Use 1 apple, chopped
  8. Prepare 1 tsp. rose water
  9. Get few drops of yellow food colour (opt)
Instructions to make Apple Suji Halwa:
  1. Boil the apples in 1/2 cup water till they turns soft. Set aside to cool and blend into a puree. Heat the ghee in a pan and stir fry the semolina on a medium flame till you get a nice aroma.
  2. Add the chopped nuts (save some to garnish), sugar and cardamom powder.
  3. Mix well and add 2 cups water, followed by the salt
  4. And food colour. Keep stirring on a low flame till it thickens.
  5. Switch off the flame and cool for 4-5 minutes. Now add the apple puree and rose water.
  6. Spoon them into silicone moulds. Refrigerate for an hour.
  7. Garnish with chopped nuts and pinch of cardamom powder. Relish as an after-meal dessert or as and when desired.

I have done this recipe a few years ago and now decided to do another version of Sooji Halwa. Semolina, when made sweet, is called sheera. Several variants of this dish are available under other names in various parts of India. For instance, in Maharashtra, it is called sheera which is the sweet version and in North India it is called sooji (suji) halwa or Mohan bhog. Pair with kale chana, poori for Kanzak prasad.
