- Get 5 medium russet potatoes, scrubbed and cut into chunks
- You need 1/4 cup olive oil
- Get 1 packages Good Seasons Italian or Zesty Italian dressing mix
- Take 1 cup Monterey Jack cheese, shredded
- Prepare 5 green onions/scallions, sliced
- You need 1 Cooking spray
Steps to make Italian Roasted Potatoes:
- Preheat oven to 400°F. Spray an 11x13" baking pan with cooking spray (Pam or similar). Set aside.
- Place cut potatoes in a large bowl and drizzle with the Olive oil. Stir well to make sure they are evenly coated.
- Sprinkle the packet of Good Seasons over the potatoes and mix well, making sure the potatoes are evenly coated. Pour mixture into prepared pan and place in oven. Bake for 35 minutes, stir and bake an additional 20 minutes.
