The ingredients needed to prepare Yellow Moong sambar:
  1. Use 1/4 cup - yellow moong dal
  2. Provide 1/2 - medium size tomato chopped
  3. Get 2 - slit green chilli
  4. Provide 1 - sweet potato chopped
  5. Provide 1/4 tsp - turmeric powder
  6. Provide 1/4 tsp - grated ginger
  7. Take 1 tsp - red chilli powder
  8. Use 1 tsp - fenugreek seeds
  9. Use 1 tbs - coriander seed powder
  10. Provide Small lemon size - tamarind
  11. Prepare For tadka :
  12. Take 1 tbs - oil
  13. Provide 1/2 tbs - mustard seeds
  14. Prepare 1 tsp - cumin seeds
  15. Take 2-3 - red chilli
  16. Prepare 1/4 tsp - asafoetida
  17. Prepare 1 tbs - curry leaves
  18. Get 1/2 - chopped onion (optional)
  19. Get 1 tbs - finely chopped coriander leaves for garnishing
Steps to make Yellow Moong sambar:
  1. Rinse the moong dal well. Cook the moong dal with pinch of turmeric powder and fenugreek seeds, grated ginger and 1/2 cup water in pressure cooker for 2 whistle.
  2. Switch off the gas.
  3. Meanwhile chopped the vegetables well. Soaked the tamarind in hot water for 10 minutes. And extract the juice.
  4. Now smashed the moong dal. Add red chilli powder and coriander seed powder. Mix well. Add chopped sweet potato, tomato and green chilli. Add tamarind juice and 1 cup water.
  5. Then add salt, jaggery. Mix all ingredients together. You can add the vegetables of your choice and whatever available in the fridge.
  6. And again cook in pressure cooker for 1 whistle. Immediately switch off the gas. Allow the cooker to release the pressure.
  7. Open the cooker. Add water if required to adgust the consistency. Now heat the oil in a small pan. Add mustard seeds, cumin seeds, asafoetida, red chillies, curry leaves.
  8. Switch off the gas. Add tadka to the dal. Mix well. Boil dal for 2 minutes.
  9. Garnish with chopped coriander leaves. Moong dal sambar is ready to serve. You can serve it with rice, idly, dosa or vada.
