- You need Potatoes
- Get Onion chopped
- Get Frozen/ fresh peas
- Take Frozen Sweetcorn
- Use Capsicum chopped
- Provide Pepper chopped (orange red)

- Use Olive oil
- Use Garlic chopped
- You need Zucchini chopped(optional)

- Take Red chilli powder

- Get Cheese grated
- Take Tomato basil puree
- Get Tomato chopped

- Prepare Garlic cloves
- Provide Salt
- You need Black pepper

Steps to make Stuffed Potato Boats:
- Peel the potatoes and washed it, cut in half and remove middle portion with spoon to make boat shape
- Tomato basil purée- Cook everything together in pan for 2 mins and make purée in blender, can use readymade sauce
- This purée can be store for 1-2 weeks which can use for Pasta, curry and burritos
- In pan take oil on medium flame, cook onion garlic
- Add all veggies and spices and cook it 2 mins
- Add tomato basil purée and rice and mix well, add salt
- Apply butter on below side of potato and filled the filling in it
- Baked it at 450 F degree for 15 mins then sprinkle cheese on it
- Baked again for 5 mins and serve hot with Ranch, sauce
Sprinkle with cheese if desired, and broil in the oven until cheese is melted and golden. Scoop out insides and mash with remaining ingredients. Cut in halves vertically and prick them nicely with a fork. Cut potato in half and carefully scoop out pulp, leaving shells intact. In a large bowl, mash potatoes using a potato masher to remove lumps.
