The ingredients needed to prepare Thai Green Curry Soup:
  1. Get 2 tbsp. olive oil
  2. Take 1 green chilli,chopped and deseeded
  3. Prepare 1 stick lemongrass,chopped
  4. Prepare 1/2 onion,chopped
  5. Use 1 clove garlic,crushed
  6. Prepare 1 teaspoon ground cumin
  7. Provide 1 teaspoon ground coriander
  8. Use 1 tbsp. Thai fish sauce
  9. You need 1 lime (zest and juice)
  10. Provide 1 small chicken breast
  11. Get 400 ml can of coconut milk
  12. Provide 1 handful fresh coriander leaves to garnish
Steps to make Thai Green Curry Soup:
  1. In a saucepan fry the chopped onion in the olive oil for a few minutes.
  2. Add the remaining ingredients except the coriander leaves,and bring to the boil.Simmer for about 10 to 15 minutes.
  3. Whilst step 2 is cooking,fry the chopped chicken breast in a little olive oil until browned and cooked through.
  4. Allow to cool to room temperature (as per manufacturer's instructions).
  5. Pour the contents from Step 2 into the Nutri Ninja and blend for about 30 seconds.
  6. Return the contents to the saucepan and add the cooked chicken breast.Gently reheat until ready to serve.
